I feel extremely sore all over. I've been working out alot everyday for a while now, and the soreness has been increasing. I think I should forgo working out for a little bit - but how long? I also want to change my exercising routine because of how much muscle I have gained (too much bulk.. I just want to slim down)! Will I slim down by doing the elliptical for 30 minutes, and then the cycling bike for 30? Or should I run instead? And should I exercise only 5/6 days a week instead of all 7?

it sounds like you are over training. I know you want results now! but it takes time and you must give your body rest. I say no more than 45 minutes of cardio max of 4 days a week and make sure you mix it up!

You should exercise about 3-4 times a week. Start with cardio, work up a sweat and keep your heart rate up for the whole work out time. do high reps and medium weight. Muscle burns fat so don't go for weights you can not do 10 or more reps on. Focus on three sets of weight training and with cardio work 30 min to an hour. you can use different machines. work a different section of the body on different days, example, i work on the treadmill for 40 mins then i work upper body on Tuesdays, lower body on Thursday and i walk/jog/run on Saturdays outside of the gym. Your muscles will hurt in the beginning but should fade after awhile. if you need anymore ideas, let me know.
