Its all because of that changing cog size changes amount of distance covered per turn of the gear or vice versa, sorry kind of find this hard to explain

small cogs driving bigger cogs (ratio) make the bigger cogs spin more revolutions per cycle...

Ratio, is the key term. A smaller gear in the back with a larger one in front. One turn of the pedals creates more turning of the back wheel with a higher ratio than a low ratio.

Gear cycles run faster than normal cycles because the big gears in the front of the bike are bigger and the little gears in the back of the bike are smaller than those found in normal cycles. It's all about the size difference between two gears. You've got 2-3 big gears up front (called chain rings) and a 6-10 little gears in the back (called cogs). Your shifters let you select which gears you want by moving the chain from one gear to another. The left shifter lets you select which front gear you want. The right shifter lets you select which back gear you want. Little gears up front combined with big gears in the back have a lot of power but aren't very fast. This is good for going up hills. Big gears up front combined with little gears in the back have a lot of speed but aren't very powerful. This is good for going downhill or for going very fast on flat ground.
